Storing Root Vegetables

     I buy my potatoes and onions from Costco that come in the big 10-20 pound bags. Instead of keeping them in the big sacks they come in, I gently separate them in cloth lined baskets that I keep on the floor of my pantry. It is very simple and keeps my root vegetables fresh for at least 2-3 weeks. I also have a third basket that I put my miscellaneous items in: Sweet Potatoes, Avocados, Garlic, etc. and I make sure that each item has room to "breath" and doesn't get bruised.
