Chocolate Chip Coconut Walnut Cookies

Yield: 24-26


2 sticks of softened salted butter
1 cup of brown sugar
1 cup of granulated sugar
2 tablespoons of vanilla extract
2 large eggs
2 1/4 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup shredded coconut
1 bag of Ghirardelli  semi-sweet chocolate chips
1 cup of chopped walnuts

1. In your Kitchen Aid mixer add your softened butter and blend with the paddle attachment.
2. Add your sugars and vanilla and mix well on medium.
3. Add your eggs one at a time and mix well on medium.
4. Add your flour, salt, powder, and soda and mix well on low.
5. Add your coconut and mix on medium.
6. Add your chocolate chips and walnuts and mix well on low.
7. Preheat your oven to 375 F.
8. Spray your cookie sheets with cooking spray and spoon your cookie dough on to the sheets. I spoon 6 balls of dough on to each cookie sheet. After the balls of dough are portioned I lightly pat the dough down to spread into even circles making them about 3/4 of an inch thick and 3 inches in diameter each.
9. Bake at 375 F for 9 minutes. After each batch is done, pull out of the oven and leave on the pan for one hour before removing. This creates the perfect crunch on the outside and soft gooey middle. YUM!

I used to make Chocolate Chip Walnut Cookies "plain", but then one day I added coconut and it made all the difference! My husband doesn't even like coconut, but now he only likes the cookies when I make them with coconut! Just wanted to share, for anyone who is thinking "ewww coconut is nasty!"  :)
